Thinking of trying Ammo + Instant Shine X 2 + P83 for starters. 
Are all the bottles 30 mL by the way?

Welcome, glad you took the plunge and joined.
Bottles, most of the consumer line alcohol based products come in both 5ml & 30ml bottles. The 30ml is much better value, although the 5mls are useful to test a product or product strength before comitting to a big bottle, also the little 'uns are convienient for travel or taking on a night out.
Ammo & IS, 2 of the best products AD sell IMO, very effective and easy to use.
P83, although definately an intesting product, I’d recommend leaving that one for a bit. It is more useful combined with other products than on its own & I’d recommend playing with some of the instant line first, finding your feet, figuring out the best dosages and combs then try some of the advanced range.

I see you have picked out some products based on what seems like some good research. What are you looking to do with this mix? That last comment was made in jest - I think we all know where that mix is going.
Now hydro did make a valid point about the P83. We usually recommend to new users to try the instant line products first and get a feel for pheromones before you start working with the more experimental pheromones and mega-mixes.
Like Hydro said, you can get all those in To Gos but really the 30 ml bottles are the best buy. I have only gotten some of the new test mixes in To Go bottles. Everything else I get in the large bottles. I use them too much for the To Gos to be economical.

What would happen if I use Ammo + IS + A314?
Would those 3 products work better together?
Or is there a 2 product combo, out of the 3 mentioned above, that may work better and save myself some $$$ in the end?

What works best all depends what you are trying to achieve and where.
Instatnt line products are the ones in the top section of the store under “mens pheromones” they are tried and tested mixes that come with a guarantee. All of these products can be combined together but I’d suggest trying them 1 at a time to start with at varying doses, then try mixing 2 together, beyond that you can mix 3 or more, but save that for later.
To start, just buy a couple of products like Ammo & Instant Shine and test them first, have a good read around this forum about the other products and decide what to get next

As hard as it is to believe, I am too honest. One of the reasons why I’m single right now. 
Speaking of my GC, where do I go to get it now? Still a noob at this. lol
You should have gotten it in the email that you used to register to the forum. If its not there, take a look at your junk/spam folder as sometimes those two become greedy and want the GC for themselves!
Once you have it, you can use your GC as well as your Points on your purchase. You have this opportunity upon checkout.

How long do I wait between Ammo sprays and do I spray IS or Ammo first when used in combo?
