As for choosing between A314 or A7. Have you thought about how you want to use them? Because these are two totally different pheros with very different applications and neither of them are colognes.

Then neither of those would be very good products to start with.
A314 is a very severe/high status product based mainly on Androsterone which on a shy guy can appear as very standoffish, fatherly, “too-good” and very strongly relationship minded. Not always the places you need to be when starting to get to know someone. Although at 27, you are getting into the age range where A314 is useful in dating, it may be too much for younger women and IME is at by far its best in the 30+ range.
You also need to be aware that A314 is not an attraction phero in itself, although it does convey very attractive qualities. For use in atraction, it usually needs to be paired with a sexual and there are many strategies for that.
A314 at work, esp in a professional occupation is very useful. Conveys all the values you need to get ahead. Absolutely brilliant there! 
Meanwhile Alpha 7 is a very sexually overt formula containing a hefty dose of Androstenone and Androsterone in a 6:1 ratio. Again, not the best for getting to know people in all but the most sexually charged/raunchy environments - Wear that at your age and any woman you meet will be in no doubt that your immediate agenda is sex. Its the chemical equivalent of walking-up to them with your cock out and dribbling. Which is not always the best attraction strategy as again, a shy/reticent guy can get taken as creepy, agressive and just too horny for his own good. Steamy clubs/parties are about the only place you could make good use of A7 at your age without massive social moderation. However, IME Italian/Southern European women are a bit more none tolerant than their northern counterparts, so this might be a good thing sometimes! 
I’ll admit to being quite fond of A7/A314 in clubs but that is generally around mid-30s and over women who tend to be more attuned to a strong status/sexual signature. This is because at my age, I will have a far lower natural androstenone output, so I can use heavier none. You will need to do a little work to find the doses that suit your age/body chemistry best.
It is true that both of these can have self effects (A314 - Cool/collected, A7 - Cocky/forward/aggressive) but it is not a good idea to base phero use on these as effects can vary wildly between individuals and you can quite quickly adapt to them and then get nothing at all.
Can I suggest you look at the lighter, more social and broad-based sexual products to begin with. These will help balance your personality and promote communication whilst sending an interesting and engaging sexuality that is much better to introduce and get to know people with. Have a lok at:
Ammo - Balanced social/sexy/attractive mix of the three main pheros none, nol and rone. Wearable in most social situations (Also the Summer variant which is more sociable still)

IO - Bright/bubbly/chatty feel that helps you approavh and be more approachable.
IH - Once you get talking to sommeone, IH helps with bonding and closeness. I like IS/IH instead of IO as a quality over quantity alternative for conversation.
Do not underestimate the socials - they really do help create the all-round basket of feelings that conspire to full-on attraction in a woman and they support all aspects of your personality/presentation in triggering attraction. Makes life so much easier.
IG - A much lighter and more social status product compared to A314 - still has bags of status but maybe far more suited to your age/demeanour.
TUTH - Mainly Androstenone, this can be difficult to get to grips with as it is mainly intended for use between partners in an established sexual relationship but it can be used to raise the Androstenone proportion of Ammo when transitioning from light social to more sexual environments and it is good when moderated with socials like IO in clubs and the like.

Pheros can indeed but they are not the only thing. You will have to step away from your shyness in order to demonstrate attractive behaviours and personality traits as well - These alongside the pheros will get you results.
